Cheesy Garden Chicken Mac

Last night for dinner, I cooked a very good, all in one dinner. It took me less then one full hour and we had a hot comforting dinner, that was chocked full of good things! I wish I would have made some bread to go with it, but not having a bread machine, I didn't have enough time for the entire process to happen before dinner time. Perhaps that will go on my Christmas list!




Cheesy Garden Chicken Mac



Ingredients

2 to 3 chicken breasts

1 cup of Large Elbow Macaroni

1 bag of frozen California mix veggies (Broc/ Caul/ Carrots)

4 oz of Velveeta cubed

1 can of Rotel

1/2 cup milk *maybe more

1 cup of shredded cheese



Directions

Boil Chicken breasts until done. You can used any kind of cooked chicken meat that you may already have on hand. You will need about 2 cups of meat!

Pull out chicken, and while it is cooling down a bit, add macaroni and vegatables to water. cook for about 10 minutes.

Cut up chicken.. Drain mac & veggies.

In same pot, add mac, veggies, velveeta, Rotel, and milk. Stir until melted.

Add chicken, and shredded cheese. Stir until well mixed.



This is an excellent dinner served with a side salad, and some hot homemade buttered bread! Don't forget the iced tea ~ or your drink of choice!
