Busy hectic schedules often calls for quick to make meals. As the wife and mother of our home, I don't want to rely on take out to feed our family so I try to find something that I can have made ahead, cook in a slow cooker, or ways to reinvent any leftovers.
Here is a tasty go to salad that everyone seemed to enjoy, and we even ate again the next day for both lunches and dinner. Needless to say it feeds a crowd.
Ingredients
1 Head Green Leaf Lettuce (or your choice lettuce) Chopped or Torn into bite size pieces
2 Large Tomatoes Chopped
1 Bag of Fresh Cauliflower/Broccoli florets cut into bite size pieces
2 Cucumbers peeled and cut into chunks
8 oz block of colby jack cheese cut into chunks
6 oz each of Salami, Bologna, Ham, Turkey, and pepperoni chopped into bite size peices
Italian Seasoning to taste (sprinkle at least a little )
Garlic Salt to taste (sprinkle at least a little)
1/4 cup grated Parmesan cheese
Directions
1. In a large bowl toss all the listed ingredients. Serve with Creamy Italian Dressing and hot crusty garlic bread.
