Loaded Potato Soup

Monday evening (after posting the menu plan for the week ahead that morning) the hubster says "You know what sounds good?" At this minute I knew that there would be changes ahead in our plan, but it always was better then what I had planned anyway! Taking Gods lead, and being open to changes has really opened my heart for gratitude in the little things. Heat on a cold day. Long sleeve shirts hidden under t shirts. Hoodies. And soup on a cold day!!!


Loaded Potato Soup

Ingredients
1 Quart of Chicken Broth
4 Large baking potatoes
4 oz cream cheese
2 cups of Cheddar cheese (divided)
2/3 cup of sour cream
1 bunch Green onions chopped
Crumbled fried bacon (I use about 9 slices)
Salt & Pepper to taste

Peel and chop potatoes into medium size chunks. Place in a pot and cover with chicken broth. If your potatoes are not covered, add just enough water to cover (or a bit more chicken broth). Boil until soft. Turn off heat, and scoop 1/2 of potatoes and some of the broth into blender (I used my Ninja). Add cream cheese and sour cream to blender. Blend until smooth. With a large spoon smoosh the remaining potatoes slightly. (NOT into smitherines! You want a bit of chunk.) Pour mixture from blender back into pot, add 1 cup of cheese, 1/3 of the crumbled bacon, 1/4 of the green onions. Add salt and pepper to taste. Top each bowl with additional cheese, bacon, and green onions as desired. I love to serve this with garlic toast for dipping!
