Today I decided to talk about midweek quick fixes. I have a few up my sleeve that often save me especially through the school year.
1. Quick Dinner: Crockpot Pork Carnitas
Ingredients
1/2 a pork loin (about 3 pounds)
1 packet of Taco Seasoning
1 packet of Ranch Seasoning
1 cup of Green Salsa

Toppings for tacos & tortillas of choice
Directions:
In bowl mix green salsa, ranch, and taco seasoning together in bowl. Pour over the pork loin that is placed into a crockpot. Cook on low 6 to 8 hours. Shred meat when it is done. (This is a forgiving recipe and can cook longer if time is not on your side that day!)

Set up a taco bar and allow those dining with you to make their own tacos!
Midweek is a good time to go through and swipe and wipe down the bathrooms. Include the mirrors too ~ because really it takes all of one minute at most!
3. Quick JumpStart: Hydrate & Deplete
Often by midweek we are facing the midweek slumps. Make it an effort to get in ONE extra bottle of water today AND an extra 30 minute walk! You'll thank me later!
4. Quick Refreshment
Take 10 minutes and sit in silence ~ with either your favorite drink in hand or your favorite CD playing in the background (or perhaps even a mixture of both)!
