The BEST Chocolate Cake Ever

This is by far the BEST chocolate cake ever, yet I can see the possibilities in making it even more intresting then a simple chocolate cake with chocolate icing. Now I am from the south and some of us southern mommies have traditional values. One of those values is to offer up dessert, especially on a Saturday evening or Sunday after supper. And by golly, you don't have a guest over to your house without having a little something sweet to offer them. Dessert and Iced Tea are two southern must haves!

Ingredients (for cake)
2/3 cup of butter softened (NOT melted)
1 2/3 cup sugar
3 eggs
1 tsp vanilla
2 cups of all purpose flour
2/3 cup of baking cocoa
1 1/4 tsp baking soda
1 tsp salt
1 1/3 cup milk
DirectionsIn a mixing bowl cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. (THIS IS VERY IMPORTANT). Mix in vanilla.  Combine all of your dry ingredients in a seperate bowl. Alternate between adding in dry ingredients and milk until remaining ingredients are in the batter. MIX between additions. Pour batter into a greased and floured 13x9 pan. Bake at 350* for 35~40 minutes until a toothpick inserted near the center comes out clean. Cool on a wire rack. When cake is cool, either frost with your favorite frosting or simply dust powder sugar on top for a simple cake. (I MUST NOTE.... if your taking the time to make a cake from scratch, take the few minutes to make the frosting too!)

Chocolate Frosting
Ingredients
3 cups powder sugar
2/3 cup of Baking Cocoa
1/2 cup of butter softened
5 to 6 TBS milk (divided)
1 tsp vanilla

DirectionsBeat 1 cup of sugar with the cocoa, butter, 2 TBS of milk, and the vanilla in a bowl with a mixer until creamy. Gradually add in remaining sugar and milk until smooth. (Makes 2 Cups)
